I was noble when I was in South Africa– Even though I had many fabulous meals that were just divine, I still was watching what I was eating and applying what Jenny Craig had taught me.

Having Jenny Craig food in South Africa was pretty easy.  One of the great things that Dad did for me was send me a huge box of Jenny Craig’s Complete Start cereal (my favorite). Thank you Dad– this really helped me out!!! 🙂 I had enough cereal to last me up until the last week of my internship.  What I would do is I would have my Complete Start cereal in the morning along with a banana or strawberries sliced on top for breakfast.

For lunch, I would pack myself a small sandwich– I would measure out the meat to make sure that I had 4 ounces along with lettuce, tomatoes, onions, and mustard.  For dinner, this was usually the meal that our class or friends would want to go out to eat, so I would have to watch what I got.  For snacks, Stephaney introduced me to Special K bars.  They are about 90 calories each and have about 2 grams of fat– not too bad!  They were pretty good! 🙂

I would say that there were some challenges that I faced while in South Africa that hopefully JC will understand when I go in for my weigh in! 🙂  First, in South Africa– food is very important as part of their culture, and if you don’t eat something– it is considered to be a no-no!  Secondly, the food was absolutely fantasic, and this was a once in a lifetime opportunity!  But it is all good– I had a scale at the Waterfront that I went on each week to make sure that I wasn’t completely going overboard– and it all worked out! 🙂  It was all good! 🙂

Hope all is going well & have a great day!

Best Wishes,

Karen 🙂
