Hello everyone!

One of the great things about being in graduate school is the fact that we are basically done with all of our classes during finals week, so we get a little bit of a break! 🙂 It has been a good semester– lots of good work and conferences to go to– but it is also nice to take some time to relax and catch our breath! This week, I have been doing an activity that my family and I really enjoy doing together: cooking!

I have so many friends of mine whose idea of cooking is pushing a button on the microwave and cook a frozen dinner. Okay, on Jenny Craig– I can understand that– but for regular meals? No! I think that everyone should know how to cook– cooking is a sign of respect and care and really is the best gift of all to give. Why? Because when you make a dish, you are adding your personal taste to it, and it shows that you really care about the people that you are cooking for. 🙂

it's fun to cook for friends or even one special friend

So– this week, I made a couple of things. For an end-of-the-semester gathering of Ph.D. students, I made my carrot cake cupcakes with Amarula— they were definitely a hit! I also made some Chicken Tetrazinni— just fabulous! And, now– I have a new assignment– my family and I are trying to develop a new cheesecake– probably either a chocolate/raspberry one or chocolate/peanut butter/ Amarula– all sound good to me! 🙂

My point is– cooking is fun, and brings together friends and family to the dinner table to experience a wonderful cuisine that will be memorable and special. Hope you all are having a great day! 🙂

Best Wishes,

Karen 🙂
