Just when I thought I was getting a ‘handle’ on South Africa cuisine, my parents asked me if I had tried any “Bobotie?” I hadn’t, yet. Not long ago , I sent a small present to them of a recipe book by Lannice Snyman entitled “Rainbow Cuisine.” In the book, there was an exquisite recipe for a milder version of the Cape-Malay favorite “Bobotie”.
Bobotie is a lamb casserole with a distinctive difference. The flavors of onion, garlic, lemon, tumeric, black pepper and curry are naturally sweetened with the addition of sultanas ( white raisins) and apricots! Positively yummy!
