Special Meals Make special Friends

The Art of Public Relations revolves to some degree around ‘hospitality.’ Helping friends feel comfortable and at ease in any situation is a goal and presenting a wonderfully delicious meal is a great initial first step.

As far back as I can remember, everyone in my family has loved to cook. In fact, often when we get together, we’ll ask,” what have you made lately?’

Probably one of my favorite casseroles is ‘Chicken Tetrazinni’ named after a beautiful opera star at the turn of the 1900’s. Louisa Tetrazinni has a fascinating history and although the memory of her many accomplishments has faded with time, the dish that was named for her has continued to be very popular although often overly simplified.

One of my all time favorite dishes!Our Chicken Tetrazinni is something special and I only ‘bring it out’ for very, very special occasions. I am planning to prepare some soon and I will need to buy a few extra items: a 14 “ non stick skillet, a ceramic container for my wooden spoons ( I often cook with many pans and pots going at the same time!) , and a few ingredients that I don’t always have lying around (sherry).

I am looking forward to ‘cooking it up’ — and it will be lovely!
