Making
Bagels is an exploration into fine bread making!
Bagels are really not
that hard to make. They require a few more steps , but
with the help of a
bread machine and the 'dough cycle' , they can be very
easy to make! First, find a dough recipe that
you like and then decide whether or not you want it to be plain or
flavored . I like Cinnamon
Blueberry as my flavorings. I like to soak dried blueberries in a little
Tennessee Rye Whiskey first.
You add the flavorings after the second rise.
Boiling the bagels
for a minute on a side gives it a trademark crust
as well as a big boost to the
size of the bagel. Using a little whisked egg and water,
sprinkling on the seeds of your choice ( sesame )
and baking for 20 minutes at 375 degrees.
If I make a
sandwich, I will toast the bagel first... very yummy!

Using my standard loaf ( 3 cups of flour), I will
divide the dough into 8 parts, roll into a ball, pat
flat then using my thumb I will form a recognizable
Bagel shape.

Paint the bagel with
your egg mixture and top with your favorite seeds.
Bake at 375 degrees for about 20 minutes
